How We Tested
Over the last few months, I have tested all of the knives in the Wusthof Classic line.
I started by rough cutting a pile of potatoes to test each knife’s ability to handle these simple everyday cutting tasks. The thin blade on the paring knife was dull and didn’t cut well at all, so it wasn’t included in the test. The rest of the knives performed similarly, though with slight differences in their ability to cut cleanly through the different types of vegetables. The chef’s knife took care of large cutting jobs like celery with ease, while the serrated edge on the kitchen shears worked best on smaller items like onions.
The steak knives were fine at their intended task, but they didn’t do anything to really stand out. They are comfortable to hold and cut easily through meat, though I did notice that the wider serrated blade on the kitchen shears worked better. On the other hand, I generally prefer a sharp tip for precision slicing, though the Wusthof steak knives are sharp enough that they can be used for piercing meat if you have no other option.
Then I moved on to slicing delicate herbs. While most herb knives work well enough, I found that their blades were slightly too flexible and wide-set to get the job done efficiently. The narrowness of the blade on the Wusthof Classic Santoku knife made it a quick favorite for this job.
Slicing tomatoes was another test. The thin flexible blade on one of my cheaper knives works well at this, but it’s almost too good – I have occasionally found myself cutting so thin that the slices come out the other side. The blade on the Wusthof Classic chef’s knife was a little thick for this, but it wasn’t bad either.
Finally, I wanted to test how well each of these knives handled bread. I’m not sure why exactly this is important, but I do know that if you talk to enough chefs, you will eventually hear someone say that you are not a real chef unless your knives can slice through a baguette cleanly. The task seemed simple enough, but it turned out to be one of the most difficult tests. I tried all of the knives myself and then watched as my husband did his best with each of them. However, neither of us could get through half a baguette before the knives started to squash the loaf instead of cleanly slicing it in two.
